I needed to replace my (15 year old) 4 burner grill. With my 28" Blackstone, I only got a 2 burner replacement (with a lid big enough to stand up a 5 to 7 pound chicken. I use my BS more than my grill at this point. Unless we are talking long low smoke, indirect heat roasting or the like, there is very little I can't/don't use the BS for.
Sous vide circulators actually pair pretty well with the Blackstone, because you can "undercook" larger steaks and chops and get a better seat on the griddle top than a gas grill. Of course, you don't even really need the circulator, you can reverse sear, it's just more convenient and foolproof. 2. level 1.
